Ingredients:
2 pounds ground beef
1 cup cooked white rice
2 eggs
Dash of salt and pepper
6 large bell peppers
Directions:
Place ground beef in bowl. Add eggs, cooked rice, salt, and pepper. Mix thoroughly. Cut tops off peppers and remove stem and seeds. Rinse hollowed out pepper. Fill peppers with ground beef mixture and replace tops. Fill roaster with 1 inch of water and place peppers inside. Cover roaster and bake at 350 degrees for one hour or until beef reaches proper temperature.
