1 3/4 cup skim milk
12 oz. can evaporated milk
3 1/2 oz. semi sweet chocolate chips
1/4 cup honey
2 tablespoons corn starch
1/2 cup cocoa

Whisk 1 cup skim milk, corn starch, and cocoa in a bowl. Set aside. In a saucepan, combine remaining milks, honey, and chocolate chips. Heat until chocolate is melted. Pour in cocoa mixture and stir over medium heat until liquid simmers and slightly solidifies. Next pour contents through a cheese cloth into a freezer safe container. Place container in freezer until contents are half frozen. Remove from freezer, mix, and continue freezing until solid. When ready to eat, allow gelato to thaw 10 minutes.
