Waking up to a delicate snowfall and the sweet smell of pancakes, is sure to make your morning special! If chocolate chips and whipped cream are omitted, this makes for a perfect vegan recipe!
Ingredients for Pancakes:
2 cups flour
4 tablespoons sugar
4 teaspoons baking powder
3/4 teaspoons salt
2 tablespoons water
4 tablespoons vegetable oil
2 cups soy milk
1 cup chocolate chips (Omit if making vegan pancakes)
Whipped cream (Omit if making vegan pancakes)
Cooking spray
Directions:
Combine dry ingredients in bowl. Set aside. Mix wet ingredients and stir into dry ingredients. Heat non-stick skillet on medium. Spray with cooking spray. Pour 1/4 cup batter on skillet, allow each side to cook until light brown. Remove from skillet. Repeat spraying pan with cooking spray after each set of pancakes.
Garnish:
Using a cookie cutter, press center of pancake. Squirt whipped cream in center of cutter and scrape excess off with a knife. Gently pull cookie cutter away to leave a raised shape on pancake. Wash cookie cutter and repeat on additional pancakes.
I love pancakes but the hint of using the cookie cutter in the middle is such a cute idea! Definitely saving this idea for later!
